Three Bean Bisque

Serves 4
A delicious starter for dinner with dear friends or a simple first course that is sure to impress the boss's family!
- 4-5 c water
- 1-2 Tbsp Olive Oil
- 1 bag Grandma Maud’s Bean Medley
- 1-2 Tbsp Cream
- 1-2 Tbsp Sour Cream
- Chopped Cilantro
- Bring water and oil to boil, add Grandma Maud’s Bean medley. Reduce heat and simmer, stirring frequently, until beans are cooked thoroughly.
- Pour cooked beans & liquid into blender, puree until smooth.
- Pour mixture back into pot, reduce to desired thickness. Finish with cream.
- Garnish with cilantro and sour cream.
- When blending hot food, cool slightly, remove round plastic center piece from lid, fold up clean kitchen towel and hold over opening while blending. Filling up only half way and following above steps will allow steam to escape and lessen the chance of an eruption.

Three Bean Vegetable Soup

A hearty classic sure to warm your soul!
- Grandma Maud’s Bean Medley 1 bag
- Low-Sodium Chicken Broth or Vegetable Broth 1-48 oz. can
- Stewed Tomatoes 1-4 oz. can
- Onion 1 medium
- Bell Pepper 1 medium
- Celery 1 stalk
- Bring Broth to a boil and add Grandma Maud's Bean Medley. Cook over medium heat for 15 minutes.
- Chop onion, bell pepper and celery. Add chopped vegetables and stewed tomatoes to beans.
- Lower heat, cover and simmer for an additional 20 minutes.

Vegetarian Black Eyed Pea Soup

This Vegetarian Black Eyed Pea Soup is packed with delicious smoky flavors, protein rich black eyed peas, and nutritious veggies.
- 2 Tbsp olive oil
- 1/2 yellow onion, diced
- 2 cloves of garlic, minced
- 2-3 bell peppers, diced
- 1-2 Tomatoes, seeded and diced
- 1/2 bag spinach (2-3 cups), cleaned
- 8-10 cups of water
- 2 Bags of Grandma Maud’s Black- Eyed Peas
- Over medium-high heat lightly sauté onions, garlic, and bell peppers.
- Add tomatoes and spinach, stirring constantly, cook until spinach is wilted.
- Add water, increase heat to high. Bring water to a boil and add Grandma Maud’s Black Eyed Peas.
- Boil 15 minutes, stirring occasionally. Reduce heat, stirring frequently, simmer 35-45 minutes or until beans are tender.
