Grandma Maud's Texas Caviar
A favorable dip on crackers or tortilla chips. Makes a great side dish too!

Ingredients
  1. 1 6.2 oz. Grandma Maud's Black-eyed Peas Bean Meal
  2. 4 cups water
  3. 1/2 cup chopped red bell pepper (the size of peas)
  4. 1 cup chopped green bell pepper (the size of peas)
  5. 1/4 cup minced red onion
  6. 1/2 tsp balsamic vinegar
  7. 1/2 tsp apple cider vinegar
  8. 1 tsp olive oil
  9. 1 tsp Dijon mustard
Instructions
  1. Begin cooking peas by combining 3 cups of water to the contents of one package of Grandma Maud's Black-eyed Peas Bean Meal.
  2. While the peas are cooking, put the chopped green onions, peppers, and red onions in a large bowl.
  3. In a small bowl, whisk together the vinegars, oil, and mustard.
  4. When the peas are cooked, stir in a cup of water, rinse, drain and toss them with the other vegetables.
  5. Pour the dressing over them, and toss. Taste and add salt if desired.
Notes
  1. For a little kick, add chopped jalapeno pepper to the mixture. Serve as a side or scooped on top of crackers.

Ingredients
  1. 1 bag Grandma Maud’s Bean Medley, prepared as directed and cooled
  2. 1 cup sour cream
  3. 1 cup salsa
  4. 1 cup of your favorite guacamole
  5. 1 cup Mexican Style Shredded Cheese
  6. 1 whole tomato seeded and chopped
  7. 1/2 cup sliced green onions
  8. 2 tablespoons sliced pitted ripe olives
Instructions
  1. Spread cooked beans on bottom of 8 x 8 dish or pie plate.
  2. Layer on salsa, guacamole, and then sour cream.
  3. Top with shredded cheese, tomato, green onions, and olives.
  4. Chill for several hours and serve.
  5. Cook Time: 30-40 minutes (for beans)
  6. Prep time: 10 minutes

Southern Salsa Bean Dip

Ingredients
  1. 1 - 6.2 oz. Grandma Maud’s Black Beans & Rice Bean Meal
  2. 1 - 16 oz. bottle of your favorite salsa
  3. 1 cup of shredded cheese
Instructions
  1. Prepare Grandma Maud’s Black Beans & Rice Bean Meal per directions on package.
  2. When the beans are finished, put remaining ingredients in blender or food processor and blend until smooth.
  3. For a little kick, add one tablespoon of hot sauce or jalapeno peppers to taste.
  4. For heartier version, fold in another bottle of salsa to finished dip and top with more cheese.
