Collard Greens

- Chicken or Vegetable Broth 6 cups
- Collar Green 2 pounds
- Drippings or Canola Oil or Olive Oil 4 cup
- Onion (chopped)½ cup
- Garlic (minced)1 tablespoon
- Southern Seasoning 4 tablespoons
- Salt 1 tablespoon
- Sugar 1 tablespoon
- Crushed Red Pepper 1 ½ teaspoon
- To boiling Broth, add two tablespoons of Southern
Seasoning and Oil.
- Add Greens, stir and cook for 15 minutes.
- Sauté Onion and Garlic to a light golden brown.
- Add to Greens and stir well. Reduce heat, cover, and simmer for 20 minutes.
- Add Salt, Sugar, Red Pepper and the remaining Southern Seasoning. Cover and simmer for 30 minutes or until Greens are tender.
- For our meat lover friends, top with crispy smoked bacon before serving.

Green Beans

Serves 4
Grandma Maud knows how to add flavor! Sauté, simmer and enjoy.

- Green Beans 1 pound

- Red Onion ½ cup
- Garlic ½ tablespoon
- Southern Seasoning 4 teaspoons
- Salt ½ tablespoon
- Sugar ½ teaspoon
- Black Pepper ½ teaspoon
- To boiling Broth, add two teaspoons of Southern
Seasoning and Oil.
- Add Green Beans, stir and cook

Southern Style Speedy String Beans

If you don't have time to boil down smoked meat or ham hocks, you don't have to miss out on traditional taste. Add 4 tsp of Grandma Maud's Southern Seasoning for every pound of beans, and you are on your way to mouth-watering, down home beans (or greens). As a benefit, you cut down on the meat, extra fat and sodium.
- 1 Tbls Olive Oil
- 1 Pound of Green Beans
- 4 tsp Grandma Maud's Southern Seasoning
- Wash and trim tips from green beans.
- Blanch Green Beans In 2 Inches of water 8 minutes
- Drain sauté blanched beans in olive oil, season cook until desired tenderness.
